Vineyard: All fruit for the Fallbrook Sangiovese was sourced from Fallbrook Estate Vineyards in Fallbrook, California. The Sangiovese was harvested when the winemaking team tasted ripe flavors of wild strawberry and pomegranate in the berries. Fruit was harvested around the 25 brix mark.
Fermentation: All lots were sent to cold maceration some for up to 3 days. Fermentation was carried out between 75F and 85F and pressed off after 2 weeks on skins. Wine was put into a mixture of new and older French oak barrels and inoculated for malolactic fermentation. It was matured in barrel for 28 months.
Tasting Notes: The Fallbrook Sangiovese has notes of cherry, pomegranate and notes of tobacco. Sweet tannins and supporting soft acidity means this 2019 Fallbrook Sangiovese is ready to drink now but could be aged up to 4 years.
